Guero’s Taco Bar has long since garnered a reputation for providing some of the finest Mexican food outside of the Motherland. In fact, its reputation has grown to the degree that eating there is considered to be an Austin, Texas tradition with locals flocking to have their hunger for real Mexican food and thirst for genuine margaritas satiated. Everyone loves our Tacos al Pastor, but did you know the history behind it? Check out this cool history article highlighting yours truly!

It is believed that Lebanese immigrants are responsible for the creation of Tacos al Pastor. They brought over their shawarma method of spit-roasting lamb from their native land in the 1930s which was in turn used as an inspiration for experts in Mexican cuisine who changed the lamb used by the Lebanese to pork for their purposes. Puebla in Mexico could be seen as the birthplace of Tacos al Pastor as this is where the Lebanese brought their cooking method first.

This month we are spotlighting Lynda Summerset, our GM!

1. What is your favorite band that plays at Guero’s? Pete Simple

2. What is your favorite dish to order? Chicken Al Carbon, the chicken is marinated in Achiote, orange juice and cooked on an open flame.  I like to add our jack cheese, guacamole and put it on one of our home made corn tortillas. This is also my family’s favorite.

3. What are some of your favorite things about working at Guero’s? Some of the fun things about working at Guero’s is our Christmas party and our Labor Day picnic. The Christmas party is full of fun and merriment. Lots of food, music and laughter fill the room as we exchange gifts, dance and toast each other. This past Christmas we even had a visit from Santa and one of his elves. The children were all very excited.

Our Labor Day picnic is held at a beautiful place called Krause Springs located about 45 min west of Austin on HWY 71. The springs fill the pool with cool water on a day that can be very hot, however we have had a few wet picnics when it has rained. Everyone always has a great day whatever the weather may be. It’s a time we get to see old friends because employees that have moved on still return for the annual picnic. Yeah, it’s that much fun.

4. How long have you worked at Guero’s? I have worked at Guero’s for 25 years. Guero’s is more like a family than just a job. Some of our customers have been coming here for as long as I’ve been here. I watched customers children grow from kindergarten to college, and beyond. Some of my best friends started off as customers. Yes this is more than just a job.

5. Who is the most famous person you have ever met at Guero’s? So many famous people have been to Guero’s however I think the most famous would be President Bill Clinton in 1995. My favorite though is Lyle Lovett. He is a regular when he is in town and he is always a true southern gentleman.
